Blini with cottage cheese and cowberry sauce

Who said that blini were made only for Pancake week? That’s not the truth. «Laced» piping hot pancakes with sour cream, honey or fantasy sauce are desired at every season. There are a lot of blini recipes. Most of all I like thin pancakes impregnated with aroma honey and stuffed with home-made cottage cheese − it’s rather good combination! And what about adding bitter-pleasant spicy cowberry sauce?

Blini with cottage cheese and cowberry sauce

For pancakes:

Ingredients:

250 ml milk
250 ml water
200 g AP flour
1 tbsp oil
2 tbsps sugar
1 egg
A pinch of salt

Directions:

Mix milk, water, oil, sugar and salt in the bowl. Add the flour slowly and beat the mixture well using mixer.
Add the egg and beat well.
Preheat the skillet with oil to medium. Pour about 2 tbsps of batter into a hot pan to form pancakes. Fry for about 3 minutes on each side.

For cottage cheese filling:

Ingredients:

500 g cottage cheese
4 tbsps sour cream
2 tbsps sugar
¼ tsps vanilla sugar

Directions:

Mix cottage cheese with sugar and vanilla sugar well, add sour cream and mix once more time.

For cowberry sauce:

Ingredirnts:

250 g cowberry
50 g sugar
1 tsp cinnamon
50 ml white wine
½ tsp starch

Directions:

Put cowberry and 100 ml water in a sauce pan and bring it to the boiling.
Add sugar and cinnamon and cook for 3 minutes.
Make a berry puree using blender.
Pour wine and warm up.
Dissolve the starch in water and pour it into berry sauce, stirring well.
Bring to the boiling but not boil. Remove from the heat.
Stuff the pancakes with cottage cheese and pour the sauce.

  2. How many blini does the batter make? does the batter keep well in the fridge? I miss the blini my Russian host mom made for me every morning! Thanks for sharing!

  3. About 25, I think. It depends on the diameter of your pan. I used about 20 cm.
    You can keep it in the fridge for about a day. I never tried to do it. I prefer cooking from all the batter at one time.
